KISS MY HASS – AVOCUDDLES AT CUCKOO CALLAY
2020 was a year that most of us would like to forget. Cuckoo Callay owner Ibby Moubadder certainly thinks so, saying it can truly ‘kiss my hass’. The hospitality industry was one of the hardest hit during the pandemic and restaurants and cafes across the globe struggled.
Ibby was lucky that his venues were all able to re-open when it was safe to do so, and so to celebrate, Cuckoo Callay are throwing an avocado festival celebrating the much loved Aussie favourite.
Chefs from Cuckoo Callay’s sister restaurants have created a special avo toast inspired by their heritage.
Brendan Fong, Lilymu’s executive chef has created an avo toast inspired by Asian flavours which will feature smoked salmon tostada, green nahm Jim and Thai herbs. Paul Farag, executive chef of Nour presents a smashed avo saj bowl with burnt tahini and sujuk, a nod to the Middle East and Ollie Hughes, executive chef at Cuckoo Callay has created an Italian inspired avo toast which includes classic mediterrean flavours of olives, pesto and mozzarella.
